When emailing questions from within a ticket it is very helpful that the the email thread is tracked in the ticket resolution history

It would be great if the same happened when sending emails from within opportunity history.

Actually, when sending an email from Opportunity using Outlook, the email is already saved under Opportunity History as a document. So it's not the same as with tickets, but it should be very useful as well for outbound emails being filed automatically.

You should verify that the option to file the email as a document is enabled under Tools > Options > Documents tab.
