Hide Ticket Status Values

Is there a way to hide some Ticket Values? We are trying to clean up the list and do not need all of them in our model.

You can visit Tools > Options > Tickets (Admin) tab and click the button to manage Ticket Status values. While unlike other lists you cannot delete a status value (as the system 'understands' these) you can rename them to something that means do-no-select like a dot or a dash.
