How can I get a report that will show the number of tickets (open, closed, etc) on a per employee basis? I would like to start reviewing these on a daily/weekly basis.

There is a report called 'Tickets list by Manager'. It is already grouped by the ticket manager (aka employee). If you need additional summary per employee or group by status you can copy and customize it. Possibly you'd like to add a field for number of tickets per employee - you can copy the field that counts number of tickets in report and put it between "Group footer WORKERID" and "Details" band.
You can also add a new group for 'Ticket Status' and add calculated field for the number of tickets per status. Important note: when generating the report you should sort it by Status.
