For our tickets, I would like to be able to log who requested a ticket. In most cases, the ‘who’ will be our client’s and their employees who we will have entered as contacts of accounts. However, when I go to select Contact in the field selection, it is not listed.

You should use the Ticket's Contact field exactly for this purpose. You can select the main contact of the Account or a secondary contact in this field.

If you try to select the Contact and the list is empty this is probably because you did not select the Account first. The Contact field displays all the secondary Contacts for the selected Account. Make sure you select the Account before you try to list the Contacts.
