When a technician is finishing a ticket online is there a way for us to block out our pricing structure and just have them input time and equipment?

Yes, you can set employees with privileges which prevent them from viewing the items price, but only set the amount of time/units. Each employee belongs to a privileges group, and you can modify one of the predefined privileges groups or add new groups with your own custom privileges. Specifically, the relevant privileges for what you need are (should be set to "off") "Charges Incl. Finance", and also "Items" which prevents users from accessing the Items full list (they will be able to select and Item for Charges, but they will not be able to view its full details).
