Customise a field and use free text and not a dropdownlist

Is it possible to customize a field but use a free textbox, rather than restrict values to a predefined list.

I know I can add entries to the list, but I want to add two fields ( VAT number and company registration number ) and I just want them to be free text.

Sure! There are two options here: if you use one of the predefined user fields (usually called Field1, Field2, etc.) you can right click above their label and select the 'Field Settings' option. A Window will open where you can set the field name, label and also its behavior - whether the field value must be selected from a list or not (e.g. free text).
The second option would be the add completely new custom field and select their type as text (read more (http://RangerMSP.com/wiki/Field_Customization)).
