If a technician selects “New labor charge” and selected labor item and hours it totals up the charges and the technician can see the prices. I don’t believe employee should be privileged to see what I am charging customers. What do you think?

You can set your employees privileges group to one without "Charges Incl. Finance" privilege (such as the "Partial" group). This means they can add Charges and set the amount of hours/units but they will not see the pricing information.
