Hi.

If I create a new charge, and choose a pre-defined item.

What will happen, if this item is renamed or deleted. Will the charge disappear ?

Items that have been used in Charges cannot be deleted so you're protected here (you should set the to Not Active).
When you rename the Item it will Not affect the Charge description. When you'll look at the selected Item for the Charge you will see the new name.
