is there a way when setting up new accounts to make certain fields required?

Unfortunately there isn't such an option at this stage.

would be REALLY nice if we could mark certain fileds as required in both Accounts AND Tickets... as we grow, it gets harder and harder to make sure employees fill in certain fields!

I second this. I constantly have to remind people to populate type and source fields.
